½ c butter 1 c sugar 1 egg 1 c shredded zucchini 1 t lemon zest 2 c flour 1 t soda 1 t baking powder 1 t cinnamon ½ t salt ½ c raisins 1 lemon (save juice for glaze) Glaze 2 cups powdered sugar Juice from one lemon 1/4 c softened butter
Directions

Cream butter and sugar. Add egg, zucchini and lemon zest. Stir in sifted flour, soda, baking powder, cinnamon and salt. Mix well and add raisins. Bake 375, 8 minutes. Cool. Glaze with lemon frosting. Mix 2 cups powdered sugar with juice from one lemon. Add ¼ cup butter softened. Mix well and frost the cookies.
